The Winery
Villa Persani is located in Pressano, a small village in the north aerea of Trento, which stands on the Pressano's on which, for centuries, the cultivation of the vine plants has been part of the culture. The company was founded in 2006 thanks to Silvano's idea of enhancing the ideas and art that has been part of Clementi's family for generations.
Following the step of his father Renzo, Silvano recovers the family plots of land with the idea of transforming the fruits of the earth. In 2012, when vineyards and apple trees were finally in equilibrium, started the transformation into a finished product of the various crops begins. Since the planting of the new vineyards and orchards, the company's philosophical imprint has been to move away from dependence on the secondary sector, aiming at a more attentive agriculture, safeguarding the environment and the territory that translates into organic agriculture.
The vineyards and orchards are certified organic ICEA (Institute for Ethical and Environmental Certification). During 2014, the company started a new challege: to restore a production area in the east of Pressano, an ancient vineyard but abandoned since the 1920s. The aerea have been restored preserving the ancient terracing and pre-existing dry-stone walls and at the same time enhancing a native vine of Pressano, the Nosiola.
The other point of view
"The other point of view" is the contraposition of the use of chemistry in agriculture, an environmental paradox: the secondary sector can't support the primary sector as the chemical practices can't support the fertility of the earth. This paradox for Silvano wants to be the mission that offer to the consumer the opportunity to “instruct” their palate to a new, but ancient, feeling of naturalness. Our products are entirely grown and processed according to the biological guidelines in place, in particular our company is certified organic and, from 2016, also Bio-Vegan.
What does it mean for us to be biovegan certified?
First of all, the message is of natural product, but it is interesting to know what Vegan certification means for products. It means that: we do not use food, ingredients, processing aids and auxiliaries of animal origin we do not use in the whole cycle of production of technological processing aids, filters, membranes and other manufacturing auxiliaries of animal origin.
